Being lactose intolerant I used lactose free milk. Remove chicken from skillet and set aside on a plate; keep covered. I had a large bone-in chicken breast so I took the skin off and removed the bones and took what was left and sliced it into 4 pieces. Wish I could post a picture lol. All 4 family members loved it. I took a chance on a work night and made it for my dinner and next day’s lunch. That sounds wonderful. I made this as a meal prep recipe and it was fabulous. May double the sauce next time and serve with rice. This will definitely be added to our normal meal rotation. My sauce was brown though…maybe because I used olive oil? I used butter instead of oil and doubled the sauce using a 3:1 milk to heavy cream ratio and omitted the cornstarch. The second time I added a little white wine to the sauce, which gave it more of a chicken scampi flavor. Just like those recipes, this whole thing is super easy BUT loaded with flavour. It was so nice having a creamy sauce made with 2% milk. Definitely will make it again. Made this tonight and we both loved it!
